WINEMAKER'S NOTES

‘Bourgogne Chardonnay’ by Athénaïs de Béru is produced from grapes sourced from trusted natural and biodynamic growers near the Béru Chateau. Following biodynamic principles, the wine is vinified with minimal sulfur, using both Amphora and wooden fermentation depending on the year. The grapes, grown in the clay-limestone soils of Saint-Bris at altitudes of 210-250 meters, are hand-harvested and gently pressed before undergoing an 18-month aging process in stainless steel vats.

Athénaïs de Béru, the dynamic force behind Château de Béru and her own négoce project in the Yonne department, revitalized her family’s historic vineyards in Chablis with a dedication to organic and biodynamic farming. After a career in finance, she returned to her roots in 2004 to produce distinctive, terroir-driven wines from locally sourced grapes, always ensuring an authentic expression without additives. Athénaïs’s commitment to sustainable practices and her passion for the land have made her a leading figure in the modern Chablis wine revolution.
