WINEMAKER'S NOTES
Chablis "Côte Aux Prêtres" 2021 is crafted from Chardonnay vines averaging 35 to 40 years old, planted on the "Hill of Priests," the highest hill in Béru. The soil is composed of small limestone scree eroded by wind and rain, giving the wine a distinctive mineral character. Hand-harvested grapes are gently pressed, followed by natural fermentation with indigenous yeasts and 100% malolactic fermentation. After 12 months of aging in old oak barrels and a year in stainless steel tanks, the wine remains unfiltered and unfined, with no added sulphites. This careful vinification preserves the unique terroir of this east-west-facing dome at 300 meters altitude.
