WINEMAKER'S NOTES

Nero di Lupo, a 100% Nero d’Avola, is a biodynamic wine embodying finesse and elegance. Sourced from organic vineyards at 230 meters above sea level on red, limestone-siliceous soils, this wine benefits from spontaneous fermentation with indigenous yeasts and is unfiltered to preserve its natural character. It matures for 24 months in concrete tanks and bottles.

STORY

Founded in 1980 in Vittoria, Sicily, by Giambattista Cilia, Giusto Occhipinti, and Cirino Strano, COS winery is a trailblazer in biodynamic wine production, focusing on ancient winemaking techniques. Pioneering the DOCG status for Cerasuolo di Vittoria, their approach combines organic practices with amphorae vinification to craft wines that embody the terroir's essence and complexity. COS stands out for its dedication to natural processes, including the use of indigenous yeasts and avoidance of chemicals, making it a cornerstone of Sicily's viticultural heritage.
