WINEMAKER'S NOTES
From a steep 0.8-hectare parcel with vines dating back to the 1930s and 1980s, this wine is the pinnacle of the De Moors’ lineup. Farmed organically on a renowned south-facing premier cru slope with rich clay-limestone soils, it combines chilled perfection with vibrant personality. Fermented and aged in used barriques for 11 months, followed by 6 months in steel tanks, this wine embodies the soul of Chablis with a unique, captivating character.
STORY
Alice and Olivier de Moor, legends of sustainable farming in Bourgogne, have been crafting organic wines since 1989. Their vineyards near Chablis, some dating back to 1902, are managed with zen simplicity, allowing the terroir to shine.
