WINEMAKER'S NOTES

This dark rosé wine is crafted from old vines of the Koumariano variety, with a small addition of Mandilaria. The grapes are whole-bunch fermented for three weeks using semi-carbonic maceration. After fermentation, the wine undergoes malolactic fermentation and is aged in vats for a year, almost entirely from free-run juice. The result is a light, perfumed wine with sunkissed berries, wild herbs, and a balance of crisp fruitiness and gentle tannins, capturing the essence of a Greek summer.

STORY

Domaine de Kalathas, led by Jérôme Binda, produces natural wines on the island of Tinos in the Cyclades. The vines, some up to 200 years old and growing on their original roots, thrive in the island’s sandy granite soils. Binda employs organic farming methods, supplemented with biodynamic and permaculture practices, to preserve the land’s natural resources. In the cellar, the grapes are hand-picked, foot-trodden, and fermented with no oenological intervention, including the absence of sulphur. The wines are unfiltered, unfined, and aged in stainless steel and clay vessels, yielding a pure expression of Tinos’ unique terroir. Total production is under 10,000 bottles annually.
