WINEMAKER'S NOTES

'Savagnin Type' 2018 by Domaine Overnoy is crafted using Savagnin grapes from three plots. The wine undergoes natural fermentation and is aged for three years on its lees in large, old oak barrels. It is bottled unfiltered, unfined, and without the addition of sulphur. The wine is made in the ouillé style, where maturation barrels are topped up to prevent oxidation, resulting in a clean and elegant profile. This meticulous process preserves the wine's purity and reflects Guillaume Overnoy's dedication to traditional Jura winemaking techniques.

STORY

Domaine Overnoy, a beacon of organic viticulture in the Jura region, was rejuvenated in 2014 when Guillaume Overnoy embraced the family legacy from his father, Jean-Louis. Guillaume, inspired by his great-uncle Pierre Overnoy, tends to the domaine's 5.5 hectares across diverse terrains, producing wines that brilliantly express their terroir.
