WINEMAKER'S NOTES
Domaine Pattes Loup 'Chablis Vent d'Ange' 2021 is produced from three parcels around Courgis: La Ménarde, Les Malantes, and Pattes Loup. The 40-year-old vines yield an average of 40 hectoliters per hectare. The wine is aged for a minimum of 18 months, with two-thirds in stainless steel and one-third in 7-hectoliter cement eggs, resulting in a wine with remarkable depth and complexity.
STORY
Pattes Loup, led by vigneron Thomas Pico, is based in Courgis, Yonne, and spans 24 hectares. Thomas, who started Pattes Loup in 2004 with 2.5 hectares, has grown the domaine through acquisitions, focusing on organic viticulture, which earned certification in 2009. The vineyard, situated on clay-limestone soil with Kimmeridgian and Portlandian limestone bedrock, is known for its meticulously tended low-yield vines. The winery employs a variety of fermentation and aging vessels, emphasizing long élevage on lees to achieve tension, texture, and balance in their wines, with minimal SO2 usage. Despite challenges from low yields due to hail and frost, Thomas's dedication to organic principles and innovative aging techniques has elevated the complexity and precision of his wines.
