WINEMAKER'S NOTES

This wine is the result of meticulous vinification processes, starting with hand-harvesting of the grapes, followed by spontaneous fermentation with indigenous yeasts in fibreglass. It is then aged for 9 months in non-first-passage wood, ensuring a mature and complex profile, and bottled with a small addition of sulphur dioxide to preserve its quality and freshness. This methodical approach highlights the winemaker's dedication to natural techniques and the expression of the terroir.

STORY

Nicolas Vauthier, founder of Vini Viti Vinci in 2009, is a pivotal figure in northern Burgundy's natural wine scene. With a background that spans opening the pioneering natural wine bar 'Aux Crieurs de Vin' to collaborating with Philippe Pacalet, Vauthier focuses on organically grown Chardonnay and Pinot Noir from underappreciated appellations like Chitry and Irancy. His minimal intervention philosophy yields distinctive, fruit-forward wines, including the notable 'Breau' cuvée, showcasing his commitment to authenticity and the expressive potential of Burgundy's terroir.
